Do not peel or core the pears, but cut into small pieces. Heat the cider and then add the pears and simmer gently until tender. Put through a sieve. Return to the pan with the sugar and lemon and stir until the sugar is dissolved. Boil moderately fast, stirring constantly until setting point is reached. Tint lightly with pink colouring and pour into hot jars. Cover as usual.
