  • 8oz each strawberries, raspberries, cherries, redcurrants, gooseberries
  • ¾ pint Water
  • Sugar


    Wash the fruit, cover with the water and simmer gently until soft (probably about 30-40 minutes). Turn into a jelly bag or cloth and leave to drip until thoroughly drained. Measure the juice, making up to an even pint or half pint if necessary. Bring to the boil, take off the heat and stir in and thoroughly dissolve lib sugar to each pint of juice. Bring to a good rolling boil and boil until setting point is reached (about 10-15 minutes). Process as usual.
