  • 5lb apples
  • 2lb sugar
  • Grated rind of one lemon
  • 1 tablespoon lemon juice
  • 1oz butter


    The best apples are those which ‘fluff’ quickly while cooking. Peel and core the apples and cut into small pieces. Put into a pan with a tight-fitting lid and very little water, and cook gently to a fine pulp. Stir the apples occasionally to prevent burning. Add the sugar, lemon rind and juice, and butter. Bring to the boil, and then simmer for fifteen minutes. Pour into hot jars and seal. This will keep for 2-3 months.
