  • 1lb red tomatoes
  • 1lb sugar
  • 1 lemon


    Chop the tomatoes and put them into a pan with the grated rind of the lemon. Simmer until soft, and put the mixture through a sieve. Put the pulp into the pan with the sugar and juice of the lemon, and stir until the sugar has dissolved. Boil rapidly until thick. This is a delicious and unusual filling for tarts.
