  • 6lb runner beans
  • 6 large onions
  • 1 quart white vinegar
  • 4oz plain flour
  • 2oz dry mustard powder
  • 1lb sugar
  • 1 teaspoon black pepper
  • 1 teaspoon turmeric powder


    Slice the beans and onions thinly and cook in a little water until tender. Drain thoroughly. Moisten the flour with a little vinegar, then mix together in a saucepan the vinegar, flour, mustard, sugar, pepper and turmeric. Bring to the boil and continue stirring all the time until the mixture is thick. Add beans and onions and continue stirring until the mixture boils again. Put into jars, and cover while hot.
