Peel and core the apples. Put the salt, ginger, chopped chillies and sugar into a pan with some of the vinegar. Add the apples and minced onions and bring to the boil. Add the chopped dates and whole raisins or sultanas and simmer until thick and brown, adding more vinegar as required (the apples make a lot of juice, and the chutney should not be runny). Put into warm jars and cover well.
