  • 1lb ripe tomatoes
  • 8oz onions
  • 4oz sour apples
  • 1lb stoned raisins
  • 4oz light soft brown sugar
  • ¼oz salt
  • ¼oz ground ginger
  • pinch of Cayenne pepper
  • ½ pint vinegar


    Skin the tomatoes and peel and core the apples. Chop the tomatoes, onions, apples and raisins. Mix all the ingredients and boil to a mash. This will take an hour or more. Put into small jars, cover, and seal when cold.
