Put the sugar, vinegar and salt into a saucepan, with the spices tied in a muslin bag. Bring to the boil and add the peeled, cored and sliced apples. Cook gently until the apples are tender, then take out the fruit, drain carefully and pack into warm jars. Boil the syrup until it thickens, take out the spice bag, pour over the apples and seal tightly.
