Ingredients

  • 2lb gooseberries
  • 12oz seedless raisins
  • 1lb

Method

Top and tail the gooseberries and put them through a mincer with the raisins and the onions. Add the sugar, mustard, ginger, salt, Cayenne pepper, turmeric and vinegar. Bring slowly to the boil, and then simmer for forty-five minutes. Put through a coarse sieve. Reheat thoroughly and pour into bottles.
