  • 4lb ripe tomatoes
  • 4 large onions
  • 1lb Demerara sugar
  • 1oz salt
  • 2oz peppercorns
  • ΒΌoz cloves
  • 2 teaspoons Cayenne pepper
  • 1 pint vinegar


    Slice the tomatoes and onions and mix with the other ingredients. Simmer gently for two hours, stirring occasionally. Rub through a fine sieve, leaving nothing but spice, seeds and skin in the sieve. Bring to the boil and boil for five minutes. Bottle when cold.
