  • 4lb plums or damsons
  • 8oz onions
  • 1 pint vinegar
  • 1oz salt
  • ½oz each ground ginger, allspice, nutmeg and dry mustard powder
  • 8oz sugar


    Cut up plums and onions and cook with the vinegar, salt and spices for thirty minutes. Sieve, stir in the sugar and bring to the boil. Simmer for one hour, stirring occasionally, and bottle while still warm.
