  • 1lb shrimps, cooked and shelled
  • 10oz butter
  • ½ teaspoon ground mace
  • ½ teaspoon ground nutmeg
  • pinch of Cayenne pepper


    Prepare the shrimps. Put 4oz butter into a saucepan, and melt it slowly. Skim off foam and remove butter from heat. Spoon the clear butter into a bowl, and discard the milky solids at the bottom of the pan. Melt the remaining butter over moderate heat. Stir in the spices and add the shrimps. Stir them so they are coated in the butter. Pour into individual dishes or one large one. Pour the clarified butter over them and leave until cold.
