  • ½lb butter
  • 2lb Stilton
  • salt
  • Powdered mace
  • Port as required
  • Clarified butter


    Pound the butter and cheese in a mortar. Season with salt and mace, moisten with a very little port and press down well in little pots. Cover with clarified butter.
