Ingredients

  • 1 tablespoon butter
  • 1 tablespoon flour
  • ½ pint milk or stock
  • 3 tablespoons chopped fresh parsley

    Method

    Melt the butter and work in the flour. Add the milk slowly, and cook gently for five minutes. Just before serving, add the chopped parsley. This is a good standard sauce with fish and ham, and the stock from cooking the fish or ham can be used as all or part of the liquid.
