  • 1 gallon young nettles
  • 2oz root ginger
  • 3 lemons, rind and juice
  • 1 gallon water
  • 3lb white sugar
  • ½oz yeast
  • 1 slice toast


    Boil the nettles, bruised ginger root, lemon rinds and juice together in the water until a dark green, then strain and add the sugar. Put the yeast on toast, and put it on the wine when it is at blood heat. Allow to ferment. When fermentation has ceased, put into bottles with a few raisins in each one.
