  • 4 heads of elderflowers
  • 1½lb sugar
  • 2 tablespoons white wine vinegar
  • 1 gallon cold water
  • 2 lemons


    Put elderflowers, sugar, vinegar and water into a bowl. Squeeze the lemons and add the juice to the mixture. Cut the lemon skins in quarters and add to the liquid. Leave to stand for twenty-four hours, stirring occasionally. Strain and bottle into screw-topped bottles. Ready to drink within a few days.
