  • 1 quart damsons
  • 1 quart water
  • 1 pint elderberries
  • 4lb sugar
  • 5 drops essence of cloves
  • a little clear honey


    Remove the stones from the damsons, and crack twelve of them. Pour one quart water over the damsons and cracked stones and leave for twenty-four hours. Boil for fifteen minutes, then strain the liquid over the elderberries. Leave again for twenty-four hours and bring to boiling point. Add the sugar and simmer for ten minutes. Take off the heat and add the essence of cloves. Bottle when cold, adding one teaspoon clear honey to each pint. Good for a cold, diluted with hot water.
