Put the blackberries into an earthenware jar and pour on the vinegar. Leave them to stand for a week, stirring and pressing the blackberries two or three times a day to squeeze out the juices. Strain the liquid into a saucepan and add the sugar and honey, and boil for five minutes. Cool completely and pour into dark bottles. Cork well and store in a cool place.
