  • 8oz plain flour
  • 4oz butter
  • 4oz caster sugar
  • 4oz currants
  • ½ teaspoon mixed spice
  • ½ teaspoon ground cinnamon
  • 1 egg
  • 2 tablespoons brandy


    Rub the butter into the flour and stir in the sugar, currants, spice and cinnamon. Beat the egg with the brandy and mix with the dry ingredients. Roll out half-an-inch thick, cut into rounds and bake at 350°F, 180°C, gas mark 4 for twenty minutes.
