  • 3oz butter
  • 3oz caster sugar
  • 1 egg yolk
  • pinch of mixed spice
  • 6oz plain flour
  • 2oz currants
  • ½oz candied chopped peel
  • Milk to mix Glaze
  • 1 egg white
  • caster sugar


    Cream the butter and the sugar until light and fluffy. Add the egg yolk and work into the spice and flour. Add the fruit and peel and enough milk to give a stiff dough. Roll out thinly on a floured board and cut into shapes with a cutter. Put on to a greased baking sheet and bake at 400°F, 200°C, gas mark 6 for fifteen minutes. After ten minutes, brush with egg white and sprinkle with caster sugar.
