The pastry for this dish is made like hot-water pastry for raised pies. Put the suet into quarter pint of water and bring to the boil. Boil for two minutes and mix into the flour with a good pinch of salt. Cool slightly and mould into pies about four inches in diameter, leaving enough for lids.
