  • 1lb fine oatmeal
  • ½lb plain flour
  • ¼lb

Method

This is a rich dark gingerbread which should be soft and sticky, and is very good eaten with a piece of cheese. Keep it for several weeks to mellow before eating, if possible in an old-fashioned bread crock. Mix all the dry ingredients together, make a well in the centre and pour in the treacle and melted butter. Heat thoroughly and bake in a buttered rectangular tin at 325°F, 170°C, gas mark 3
