Ingredients

  • 3oz butter
  • 8oz self-raising flour
  • 1oz caster sugar
  • 1ozchopped mixed peel
  • 2 teaspoons caraway seeds
  • 1egg
  • a little milk

    Method

    Rub butter into flour, add sugar, peel and caraway seeds. Mix to a soft dough with egg and a little milk. Put into greased patty-pans and bake at 425°F, 220°C, gas mark 7 for twenty minutes. The mixture rises and curls over to resemble a wig. Eat with mulled elderberry wine, or dip in ale.
