  • 1lb plain flour
  • 8oz demerara sugar
  • 5oz butter
  • 2oz lard
  • 4oz candied lemon peel
  • pinch of mixed spice
  • 8oz golden syrup
  • ½oz bicarbonate of soda
  • pinch of tartaric acid
  • 1 teaspoon ground ginger
  • pinch of powdered ammonia


    Rub the butter and lard into the flour. Mix the spices, sugar and ammonia. Put the syrup into a bowl. Bring the soda to the boil in two tablespoons water in a saucepan and add this to the syrup. Do the same with the tartaric acid until it froths and then mix all the ingredients into the flour, together with the lemon peel cut very finely. Mix to a soft paste and roll out into one-inch thick strips. Cut these in pieces one inch long. Put on to a greased tin, leaving room for the biscuits to spread. Bake at 350°F, 180°C, gas mark 4 for thirty minutes.
