  • 1lb shortcrust pastry
  • 1lb plums, apples or blackberries
  • Demerara sugar to taste

    Method

    Line a round flat tin with a layer of shortcrust pastry. Put half the fruit on this and sprinkle with sugar. Cover with another layer of pastry, then more fruit and sugar and then top with pastry. Bake at 375°F, 190°C, gas mark 5 for one hour; serve topped with sugar.
