  • 1lb plain flour
  • 8oz butter
  • 1oz light soft brown sugar
  • pinch of salt
  • 4oz currants
  • Milk and water mixed


    Rub the butter into the flour. Add the sugar, salt and currants and mix to a firm dough with a little milk and water mixed. Roll out half an inch thick and cut into two-and-a-half inch rounds. Dust with a little caster sugar and bake at 350°F, 180°C, gas mark 4 for twenty minutes.
