  • 5oz dark soft brown sugar
  • 5oz black treacle
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • 2 teaspoons bicarbonate of soda
  • oz butter
  • 1 egg
  • lb plain flour


    Put the sugar, black treacle and spices into a saucepan and bring to boiling point. Add the bicarbonate of soda and pour the mixture over the butter in a bowl. Stir until the butter melts. Work in the egg and sifted flour and mix thoroughly. Knead on a floured board and then chill for thirty minutes. Roll out thinly and cut into shapes. Put on greased baking tins and bake at 325°F, 170°C, gas mark 3 for ten minutes. Cool on a wire rack, and decorate with icing. These are particularly popular at Christmas time cut into special shapes such as angels, Christmas trees, stars, hearts and animals.
