A traditional part of the Christmas Eve feast, this nourishing, slightly sweet almond soup is made with rice and currants and is often served with an egg yolk. It makes a hearty appetizer for a winter meal, or can be eaten on its own as a snack.

Ingredients

  • 500 ml/17 fl oz/generous 2 cups milk

Method

  1. Bring the milk to the boil in a large, heavy pan. Add the ground almonds, stir and cook gently, stirring often, over a low heat for 15-20 minutes, or until slightly thick.
  2. Mix together the rice, almond extract, currants or raisins and sugar, if using.
