Herrings, prepared in many different ways, are a firm favourite in Poland. They are particularly popular during Lent, on Christmas Eve and on Ash Wednesday, when meat is not allowed. This dish of herrings marinated with spices can be made in advance and kept for a week.

Ingredients

  • 4 medium herrings, cleaned, or 8 boneless fillets
  • 2 large onions, thinly sliced

Method

  1. Soak the herrings in cold water for at least 24 hours and up to 36 hours, changing the water several times.
  2. Drain the water and carefully remove the skin by sliding a sharp knife just under the skin’s surface.
