Considered by some to be the national dish, bigos is one of the most treasured of the Old Polish recipes. Hearty and sustaining, this sauerkraut, cabbage and meat stew can be found in many different forms throughout the country, depending on what is available and individual preference. It is usually allowed to cool and then reheated several times so that the flavours can intensify, and it is often served with rye bread to mop up the delicious juices, and vodka - said to aid digestion
