These soft little dumplings, which are similar to Italian gnocchi, can be served with different toppings. Here they are served with a crisp breadcrumb topping, adding texture and colour to the dumplings. They make an excellent accompaniment to braised meats.

Ingredients

  • 5 potatoes, unpeeled
  • 225 g/8 oz/2 cups

Method

  1. Cut the potatoes into quarters. Place in a pan of boiling water and cook for 10-15 minutes, or until tender. Remove from the heat, drain and leave to cool.
  2. Push the potatoes through a ricer, or mash to a paste with a potato masher. Add the flour, egg and salt, and knead to combine.
