Fresh and tangy, this simple salad of sliced leeks and apples with a lemon and honey dressing can be served with a range of cold meats as part of a summer meal. For the best result, make sure you use slim young leeks and tart, crisp apples.

Ingredients

  • 2 slim leeks, white part only, washed thoroughly
  • 2 large apples
  • 15 ml/1

Method

  1. Thinly slice the leeks. Peel and core the apples, then slice thinly.

  2. Put in a large serving bowl and add the parsley, lemon juice, honey and seasoning to taste.
