Method

Method of Preparation

  1. Remove rind from bacon if necessary.
  2. Trim fillets.
  3. Preheat oven to 375°F.

Method of Cookery

  1. Season fish fillets with lemon juice and pepper. Roll up fillets and wrap in one thickness of bacon (approx. inches long).
  2. Arrange rolls in a lightly greased fireproof dish and cook quickly in a hot broiler.

Serving

Serve skewered with cocktail stick and garnished with parsley and lemon wedges. Accompany with a dry white wine (Riesling style).
