Tarragon wine vinegar 1 cup 8 fl. oz. 240 milliliters
Olive oil ¾ cup 6 fl. oz. 180 milliliters
Dry mustard ¼ tsp. ¼ tsp. 1 gram
Cayenne pepper ½ tsp. ½ tsp. 2 grams
Onion 1 medium 1 1
Garlic clove 1 1 1
Sugar 1 oz. 1 oz. 30 grams
Parsley stalks, chopped 2 tbsp. 2 tbsp. 10 grams

Method

Method of Preparation

  1. Skin tomatoes.
  2. Peel garlic clove.
  3. Measure oil and vinegar.
  4. Finely dice onion.

Method of Cookery

  1. Mix mustard, cayenne, onion, garlic, sugar, and olive oil. Add vinegar and shake sauce well.
  2. Place tomatoes in a bowl. Scatter top with chopped parsley stalks and cover with the dressing. Place in the refrigerator and leave overnight.

Serving

As a first course with crisp hearts of lettuce and triangular pieces of finely sliced and buttered wholewheat bread.
