A whole baked fish can be delicious, and if you can’t lay your hands on a trout then there are many commercially available fish that make a good substitute. The butterfish shown in this basic method is a wonderful purchase and when served with lemon butter sauce—boy oh boy! If you can get a trout, then toss away the wet newspaper and try this method—it works.

Method of Preparation

  1. Prepare a muslin pad for cleaning fish.
  2. Wash fish thoroughly and dry inside and out.
  3. Preheat oven to 350°F.
