Salami ½ lb. 8 oz. 230 grams
Raw oysters 2 doz. 2 doz. 2 doz.

Method of Preparation

Slice salami thinly—leaving the skin on—into 24 rounds.

Method of Cookery

  1. Heat frying pan until moderately hot (375°F.).
  2. Drop salami onto hot surface and leave until slices curl up into cups.
  3. Remove and serve with a raw oyster in each salami cup. Dust with chopped parsley.


These make wonderful snacks at a cocktail party and also provide a good first course. They can be served either hot or cold. For hot service, serve salami straight from pan; for cold, chill salami cups on tray in normal refrigerator before adding the oyster.
