Method of Preparation

Slice cheese ¼ inch thick—cut bread—trim edges—halve tomatoes—chop parsley—trim rind from bacon —heat broiler to medium hot—put on water for poached eggs.

Method of Cookery

  1. Toast bread slices.
  2. Spread with butter and place cheese slice on top.
  3. Broil until the cheese bubbles. Cover with bacon, broil again until bacon is just cooked (approximately 4 minutes).
  4. Meanwhile, poach eggs as per basic method. Slip onto bacon. Decorate with tomato halves and chopped parsley.


I find this makes a perfect Sunday night snack around the fire in the winter. Coffee called for here?
