Butter, melted 1 tbsp. 1 tbsp. 15 milliliters

Sauce:
Butter 4 tbsp. 2 oz. 60 grams
Superfine granulated sugar 4 tbsp. 4 tbsp. 60 grams
Orange zest, grated 1 tbsp. 1 tbsp. 7.5 grams
Lemon zest, grated 1 tbsp. 1 tbsp. 7.5 grams

Method

Method of Preparation

Sift flour with salt—use yolk of one egg plus 1 whole egg—measure milk—melt butter for pancakes— juice oranges and lemon for sauce.

Method of Cookery

  1. Mix dry ingredients, make a well, add eggs and milk gradually, beating all the time.
  2. Add melted butter, beat and stand, covered, for 4 hours at least. Make pancakes as shown above.

Sauce

  1. Place butter and sugar in a hot pan and make a light fudge.
  2. Add orange and lemon zests and juice, the latter a little at a time. Stir until boiling.
  3. Add pancakes and fold into quarters in the sauce. Serve coated with sauce.
