Sliced apples 2 2 2
Soft brown sugar 6 tbsp. 2 oz. 60 grams
Lemon parsley butter 4 tbsp. 4 tbsp. 60 grams


Method of Preparation

  1. Soak ½-inch-thick gammon steaks for 12 hours in cold water. Rinse. Snip rind every inch. Dry. Season with ground black peppercorns (no salt).
  2. Slice apple (½ apple per steak).
  3. Measure sugar.
  4. Heat broiler to medium.

Method of Cookery

  1. Brush steaks with clarified butter.
  2. Place under medium broiler and cook 5 minutes, turn and broil 3 minutes.
  3. Remove from heat, cover with sliced apples, and dust with brown sugar.
  4. Replace under hot broiler for 2-3 minutes to glaze.
  5. Serve topped with a large pat of lemon parsley butter.


Glazed whole carrots and perfectly cooked asparagus tips go well as vegetables. Green Pepper Potatoes also help to set the meal going. Very cold cider then makes it all worthwhile.
