Sweetbreads are glands. They come from either the pancreas (stomach sweetbread) or the thymus (neck or breast sweetbread). We eat sweetbreads from either lambs or calves. The lamb sweetbreads are small and as you can see from these photographs, those from the calf are large. It doesn’t matter how you prepare them later on, the basic preparation remains the same. You
