Surprising as it may seem, the leading chefs in London test their potential cooks by asking them to cook either a plain omelet or boil potatoes. It isn’t as easy as some people think to boil the humble spud, and this probably accounts for the fact that it is, in my opinion, the perfect way of cooking potatoes.
