Method of Preparation

Bake potatoes as shown in basic method—slice cheese into 4 even slices—preheat broiler to medium hot.

Method of Cookery

  1. Slice potatoes in two lengthwise when cooked.
  2. Cut into potato flesh with a small knife—do not cut through the skin. Season this cut surface with the salt and freshly ground white peppercorns.
  3. Lay sices of cheese onto potatoes and place under the hot broiler. Cook until nicely browned.
  4. Dust with chopped parsley and serve.
