Method of Preparation

Bake potatoes—cut in half lengthwise and spoon out filling—chop parsley—squeeze lemon.

Method of Cookery

  1. Fry bacon crisp and then chop finely.
  2. Add butter and milk to potato and cream well. Season highly. Add chopped parsley and bacon.
  3. Fit pastry bag with a star nozzle and pipe mixture into potato “jackets.”
  4. Top each serving with 1 mushroom fried in butter and lemon.
