Method

Method of Preparation

Wash potatoes well, dust with salt, bake in 350°F. oven for 1-1¼ hours until cooked—roughly chop onions—dice tomatoes—grind peppercorns—measure cream.

Method of Cookery

  1. Remove potatoes from oven, cut in half, scoop out centers into large saucepan.
  2. Blend with cream, season, add spring onions and tomato. Heat through, stirring gently.
