Method

Method of Preparation

If beans are thin, young, and tender, leave whole: if larger, then cut into 3-inch lengths. Squash garlic with knife (do not chop or crush)—squeeze l/2 lemon—chop parsley—measure butter.

Method of Cookery

  1. Place butter in pan, add garlic, then beans.
  2. Season, cover, and cook approximately 10 minutes on medium heat until tender.
  3. Toss from time to time with lid on.
  4. Just before serving, add juice of ½ lemon, parsley, and light dusting of nutmeg. Remove the garlic piece.
