Water 2 tbsp. 1 fl. oz. 30 milliliters
Butter 2 tbsp. 1 oz. 30 grams

Cream ¼ cup 2 fl. oz. 60 milliliters


Method of Preparation

  1. Wash spinach well and remove stalks.
  2. Measure cream and sugar.

Method of Cookery

  1. Place spinach in saucepan with water and butter. Season with salt and pepper. Cover and cook over low heat 5 minutes. Drain and purée in blender.
  2. Heat purée and add the sugar and then the cream. Season again if necessary.
