Method of Preparation

  1. Divide cauliflower into flowerets and boil in salted boiling water for 8 minutes—drain.
  2. Fry breadcrumbs in 2 tablespoons of clarified butter until crisp and golden.

Method of Cookery

  1. Place butter in a pan and allow to brown—remove the pan from the heat.
  2. Place the cauliflower on a heated serving dish—sprinkle with vinegar—brush with the browned butter, and sprinkle with breadcrumbs.
