Spring onions ¾ cup 3 oz. 85 grams
Cream 6 tbsp. 3 fl. oz. 85 milliliters
Lemon juice 1 tbsp. ½ fl. oz. 15 milliliters
Lettuce leaves 4 large 4 large 4 large


Method of Preparation

Peel cucumber—finely dice—soak in salt water at least 2 hours—chop spring onions finely—add lemon juice to cream and beat slightly—wash lettuce leaves well—use a Granny Smith apple in preference to others.

Method of Cookery

  1. Drain cucumber. Combine with spring onions and soured cream.
  2. Peel, core, and finely slice apple; add to salad immediately before serving.
  3. Place mixture in crisp lettuce leaves and serve.
