Lemon juice 2 tsp. 2 tsp. 10 milliliters
Blue vein cheese ¼ cup 2 oz. 60 grams

Method

Method of Preparation

Prepare mayonnaise as shown above—weigh cheese—measure lemon juice.

Method of Cookery

  1. Mash blue vein cheese with lemon juice and add a spoonful of mayonnaise—mix to a smooth paste.
  2. Blend paste into remaining mayonnaise.
  3. The dressing will keep well. In fact, it tends to improve with age.
