During the year, farfel is fashioned from noodle dough that is grated into barley-size bits, but on Passover, like everything else, a stand-in is made from matzoh.

Available packaged in supermarkets around Passover, matzoh farfel is essentially plain matzoh that has been broken into chips. Jewish cooks substitute it, often toasted first for extra flavor, for the many starches proscribed during Passover to prepare croutons, stuffings, and casseroles.
